Finally, I can relax!!

Happy Sunday!! And might I say, for ONCE it was quite the relaxing weekend! My anatomy class was canceled on Friday which was a blessing because my boss called me and she set up an opportunity to work with an event with Coke! Coke was going to be on campus on Friday promoting their new recycling project and every time someone recycled i just handed them a prize... seemed pretty fool-proof? right? I got to meet this great girl Katheryn! It was quite the experience! Thanks Justine!
So, after i finished with the whole coke thing Jordan and I decided we were going to Savannah for a little date night! We packed a little picnic and headed down! On the way, we caught a flat... it was nothing short of hilarious. We finally made it to Savannah and enjoyed our picnic of PB&J, apples, energy balls (recipe coming soon!), pita chips, and water. We ended the night with chocolate covered strawberries and a stroll around Savannah! 

Today was about the laziest day EVER! For once I had no homework ever and it felt great! I woke up and decided to make some veggie chili! So here it is to share with you all! Its full of wonderful things and it keeps you feelin' fuller for longer! Thanks to the fiber in the beans and veggies, not only is it good for your heart, but good for colon! :)


Start by heating a medium skillet on medium to high heat. Add about tsp of butter OR cooking spray to hot pan. Start chopping veggies!

3-5 Celery Stalks, 1 Onion, 1 Squash, 1 Green Pepper
You can add anything you want! It's up to you and your imagination!







Let sautee till they have soften; about 5-6 minutes.

After you sautee, pour the veggies in a crock pot. Add in 1 (16oz) can of tomato puree. Depending how you like your chili you may add more. I add 1 1/2 cans because I like mine more soupy. Then, add in the beans. This is also up to you what you add in. The recipe calls for:
1 can Black Beans
1 can Garbanzo Beans
1 Can Kidney Beans
Finally, add in your spices! 
1 tbsp Parsley
1 tbsp Oregano
1 tbsp Basil
1 Tbsp chili powder ( more if you like spicier)





Let stand for at least 2 hours and then serve! Serve with bread or tortilla chips! Enjoy :)
